Leek and Potato Soup
Ingredients
1 onion
2 cloves garlic
1 large leek
1 carrot
1 stalk of celery
2 medium poataoes
Olive oil
3 cups organic chicken or vegetable stock
salt and pepper to taste
Directions
Chop onion, garlic, leek, carrot and celery. Heat oil in pan and sauté veges until soft. Approx 10 minutes. Peel and chop potatoes, add stock, potatoes and salt and pepper to veges and simmer with a lid on until thick and delicious. Either blend or mash once cooked and serve with a generous grind of S&P.
