2 Ingredient Banana Coconut Cookie -GF

Ingredients

2 x ripe bananas

1 1/2 cups desiccated coconut 

Directions

Preheat oven to 180°C

Mix banana and coconut in a food processor or blender

Make into cookie rounds and place on either a greased oven tray or an oven tray lined with baking paper.

Bake for 15 - 20 mins until the edges of the cookies turn brown.

You can also add a small amount of chopped fruit, nuts or chocolate chips to the cookies 

Such an easy wholefoods recipe for using up ripe bananas and great in the kids lunchbox.
