Whipped Coconut Cream
Ingredients
1 box of coconut cream (I find the Kara brand whips the best - but keep it in the fridge for at least 12 hours)
1/2 teaspoon of maple syrup if you would like it a little sweeter
Cinnamon to taste
Directions
Using electric mixers whip the coconut cream and maple syrup until thick and creamy. Add cinnamon to taste.
This is a favourite treat at my house. So good with seasonal fruit, especially berries or feijoas. Perfect as an icing, on top of cakes, pancakes or just straight from the bowl.
