Banana Muffins - GF

Ingredients

3 ripe bananas

1/2 cup dates - soaked in boiling water to soften

1/3 cup butter

1 egg

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1/2 cup buckwheat flour

3/4  cup brown rice flour

1/2 cup desiccated coconut

Small handful of frozen raspberries for decoration

Directions

Pre heat oven to 180°C

Melt butter in a sauce pan

Remove dates from water

In a food processor or bender blend all ingredients except the frozen raspberries

Grease or line muffin trays

Spoon mixture into the muffin trays and top with a frozen raspberry on each one

Bake at 180°C for approx 25 minutes
